Our Table: Hummus Wrap

I have to eat out for lunch a lot for work.  And let’s face it, I do not have the self control to eat a salad at a free work lunch – for the most part it’s burgers and fries, pasta, sushi, etc.  So for days when I get to bring my own lunch, I’m always on the hunt for easy, healthy options.  I came across this wrap from the Pioneer Woman and decided to create my own version at home.  It’s really good and nutritious and has become a weekly staple for me.

First I warm up a spinach tortilla in a hot skillet for about 30 seconds.  You can use any type of tortilla, but spinach just makes me feel healthier. Spread about 1/4 cup of hummus down the middle.

Then chop a jarred sweet red pepper.  I like to use the Mancini brand, but any of the jarred versions would be fine.  I also like adding in a couple tablespoons of black beans.  I think the flavor really works with all of the other ingredients.  I usually add in a little store-bought rotisserie chicken as well, but that’s completely optional.

Mix about a cup or two of mixed salad greens with a tablespoon or two of balsamic vinaigrette and add to tortilla.  Finally I add a few sprinkles of crumbled feta cheese.  Roll up the tortilla, and voila!  You have a quick, easy, and healthy lunch.
