Our Table: Skinny Personal Pizza

Like most people, I love pizza!  But I don’t love how many calories I rack up when I eat them.  A couple of months ago I started making my own personal pizzas with Trader Joe’s Handmade 100% Whole Wheat Tortillas.  They are much healthier and very tasty.  Here’s how I do it.

 

Cheese Pizza

1 TJ’s Handmade 100% Whole Wheat Tortilla

1/2 cup of part skim shredded mozzarella cheese

Pizza Sauce (recipe below)

Assembly pizza sauce and cheese on top of tortilla.  Baked at 375 degrees for 10 minutes (or until desired temperature).

 

I like to make this simple pizza sauce at home.  It’s super easy and I freeze half of the batch to save for later.

1 (15 oz) can tomato sauce

1 (6 oz) can tomato paste

1 tbsp ground oregano

1 1/2 teaspoons dried minced garlic

1 teaspoon ground paprika

1/2 tbsp dried basil

1/2 tsp onion powder

Blend until combined.

I also like to add different toppings to my pizza to change it up.  Here are some different things I’ve tried and enjoyed.

 

Arugula and Tomatoes

Handful of baby arugula

4 grape tomatoes, cut in half

drizzle of balsamic vinegar

Combine a small amount of Balsamic vinegar over arugula and mix with tomatoes.  Add to the top of your pizza before baking.

 

Blue Cheese and Pears

2 tbsp crumbled blue cheese

1/4 pear, sliced

drizzle of Balsamic vinegar

Arrange blue cheese and pears on top of pizza.  Drizzle a small amount of Balsamic vinegar on top of pizza before baking

 

Avocado and Balsamic Vinegar

1/4 hass avocado, sliced

drizzle of Balsamic vinegar

Arrange avocado on top of pizza.  Drizzle a small amount of Balsamic vinegar on top of pizza before baking.
