Sun Dried Tomato Pesto Pasta

Since LC has started the #FedUp challenge (read about here), I have been looking at the sugar content in all of my food. I am proud to say this dinner is sugar free and #FedUp challenge approved. This meal is SUPER quick and easy. You can literally cook the entire meal in less than 15 minutes (check out my other quick pasta dish). . Plus, these are ingredients that keep for a while and are perfect to have one hand.  I threw this together on Friday night as the hubs and I were recovering from a busy work week.  We were both pleased and have now added this to our meal rotation. Enjoy!

Udi’s new gluten dinner rolls are incredible and a must try for my Celiac friends (Stay away LC! These are not sugar free.)

Ingredients:

12 oz fresh rice noodles (fresh noodles cook in TWO minutes!)

3 tbsp pesto ( I love Giada for Target)

2 tbsp Sun- Dried tomatoes

1/4 cup light feta cheese

Directions:

1. Boil noodles per directions on packaging

2. Add pesto and sun-dried tomatoes to food processor and blend

3. Whisk together sun-dried tomato pesto mixture with 1/2 cup of noodle water

4. Mix pesto sauce with noodles and top with feta

5. Serve immediately
