Our Table: Chicken & Zucchini Poppers

During football season, I always craving something salty to munch on while watching games. I recently was introduced to these delicious chicken & zucchini poppers! They are paleo, gluten free and whole30 approved. I love dipping them in guacamole so I feel like I am eating chips without being unhealthy. Best of all, they are boy approved!

1 lb. ground chicken breast
2c grated zucchini (leave peel on)
2-3 green onions, sliced
3-4 Tbsp cilantro, minced {optional}
1 clove garlic
1 tsp salt
½ tsp pepper
olive oil, for cooking (or coconut oil, avocado oil, or ghee)

Directions

Mix all ingredients together and roll into small balls or patties – whichever you prefer! Heat oil olive over a skillet on medium high. Cook poppers until throughly cooked. Serve with guacamole or your favorite dipping sauce!
