This Thanksgiving was the first time I actually contributed anything more than a store bought Honeybaked Ham – although those things are delicious! I’m finally grown up table status. Unfortunately I was in too big of a rush/panic to take blog photos – #badbloggerstatus. I will still share the recipes though, because they were big hits if I do say so myself.
First, I made the Pioneer Woman’s Peanut Butter Pie. It was so easy and very tasty! I followed the recipe exactly except I may or may not have purchased a pre-made Oreo crust.
My family requested Mac and Cheese so I decided to attempt it by myself. I went with a crockpot recipe since the oven was occupied most of the day. I used Paula Deen’s Crockpot Macaroni and Cheese as a base, but I did make quite a few substitutions.
16 oz uncooked macaroni
½ stick butter
2 ½ cups grated cheese – I used 1 cup mild cheddar, 1 cup sharp cheddar, and half a cup of extra sharp white cheddar
3 eggs, beaten – I omitted the eggs and it turned out fine
½ cup sour cream – I exchanged for whipping cream (don’t judge, it’s Thanksgiving!)
1 can condensed cheddar cheese soup
½ tsp salt
1 cup milk
½ tsp dry mustard – I used paprika instead
½ tsp pepper
Partially boil the macaroni – about 5 minutes – until kind of tender.
Paula says to mix the butter and cheese until melted in a medium saucepan, but I just went straight for the crockpot to avoid extra dishes. Add in the rest of your ingredients, and cook on low for about 2.5 to 3 hours, stirring occasionally.
I wouldn’t recommend making either one of these dishes often, but they are worth the calories for a Thanksgiving splurge. I hope you and your family had a great holiday weekend!
