Our Table: Taco Bar

A few weeks ago, I had my PhD program over for an end of the semester celebration. I wanted to make a meal that would work for people who were vegetarians, gluten intolerant, and health conscious. A taco bar was the perfect solution to feed a large group with a variety of options.Β DSCN8230

I made this chicken in my crockpot and easily shredded it in my Kitchen Aid. The recipe easily tripled. It was great to put together in the morning and come home to your house smelling like a fiesta.

My Taco Bar:

  • Shredded chicken
  • Corn tortillas
  • Flour tortillas
  • Large burrito tortillas
  • Chips
  • Roasted corn
  • Rice
  • Black beans
  • Refried beans
  • Tomatos
  • Shredded lettuce
  • Bell peppers
  • Grated cheese
  • Variety of salsa from Trader Joe’s


For drinks, I served sangria, sparkling pink lemonade, sparkling blood orange juice, wine and water. I used my favorite sangria recipe and per usual, it was all gone at the end of the night.



For dessert, I served gluten free Symphony brownies. I used Trader Joe’s gluten free brownie mix instead of suggested mix.


The taco bar was a hit with my classmates and professors. I plan to do again for our next large dinner party. It was so easy to set up and required very minimal time in the kitchen.
