For as long as I can remember, mexican lasagna has been a go to dinner in our household. This recipe is not only easy to make, it’s delicious and will have plenty of leftovers for the rest of the week. I apologize for the lack of photos, we were too hungry to take them! Thanks Mom for the recipe!
1 pound ground beef
1 onion chopped
1 can chili hot beans 15oz
1 can tomato sauce 8oz
1 can chopped green chilies 4oz
1 package taco seasoning
4 large flour tortillas
2 cups of grated cheddar cheese
Brown ground beef with onions. Drain grease well.
Mix the beans, tomato sauce, chilies and seasoning. Place two flour tortillas in the bottom of a 13×9 inch baking dish. Spread 1/2 of the bean and meat mixture on top. Sprinkle 1/2 of the cheese on top of this layer. Repeats all layers a second time, ending with cheese on top.
Bake at 350 degrees for 30 minutes. Over with aluminum foil for the first 20 minutes. Let sit 5 minutes before serving.
Serve with sour cream, salsa and shredded lettuce.
