In June, Ellison and I (plus the boys) traveled to Colorado Springs to celebrate Kathryn and Ryan’s wedding. I’ve been to Colorado a few times, but not during the summer months. It was fun exploring and seeing what Colorado had to offer that didn’t involve snow or skiing. Chris and I kicked off our long weekend by visiting my brother and sister-in-law who recently moved to Denver. Thanks H and H for letting us crash with you! Please excuse the poor quality photos, I forgot my camera and only had my iphone.
On to the good stuff – we started off our trip with breakfast at Snooze A.M. Eatery. The breakfast tacos were on.point. Seriously, you need to go there and try them asap.
After stuffing our faces, we ventured over to Red Rocks Park to explore. We were quite intimated by all the runners who were there, especially for it being a Thursday – #goals.
We spent the rest of the day hiking to the Mother Cabrini Shrine, drinking our way through the Coors Brewery and watching the Colorado Rockies play the Arizona Diamondbacks at Coors Field. Since we hadn’t eaten enough that day, we topped it off with a bourbon & butterscotch milkshake at Milkbox Ice Creamery in Union Station.
We spent the rest of the weekend exploring Manitou Springs and hiking in the Garden of the Gods. We definitely want to go back here and explore more. We didn’t get a chance to go to the Seven Falls on this trip, but want to next time! One of our favorite activities was participating in the sing along at The Golden Bee. You’re welcome to everyone who got to hear us that night.
