A few weeks ago, I had my PhD program over for an end of the semester celebration. I wanted to make a meal that would work for people who were vegetarians, gluten intolerant, and health conscious. A taco bar was the perfect solution to feed a large group with a variety of options.
It’s here, it’s here! The day when you are supposed to eat as much queso as you would like, free of judgement. So naturally, it’s one of our favorite days of the year.

Let’s be real, it’s May. We are twenty-somethings swamped with weddings, wedding showers, baby showers, baby sprinkles, graduations, and our full time jobs are bustling too!
